The kitchens operate under the direction of Stéphane Galibert, who is supported by a team that is as passionate and attentive to detail as he is. Eric Gonzalez, the executive chef at Montreal Casino restaurant L’Atelier de Joël Robuchon, is out, after less than two years running the kitchen at the famed French chef’s local outpost.. Gonzalez, who arrived with experience at Auberge St-Gabriel and the Casino du Mont-Tremblant, was the opening chef for the restaurant. Il n’en fallait pas beaucoup pour me convaincre; j’étais déjà tout à fait intriguée par le restaurant de ce légendaire chef, celui-là même qui détient le plus d’étoiles au monde au guide Michelin.
